Блюдо само по себе очень сытное, поэтому лучше всего его употреблять с салатом из зеленых овощей.

Ингредиенты 1-го этапа:

Вешенки 150 г Лук репчатый (100г) 1 шт.
Чеснок дольки 4 шт. Кабачки 150 г

Сначала надо вымыть и очистить грибы и овощи — молодой кабачок, большую луковицу и несколько долек чеснока.

Ингредиенты 2-го этапа:

Оливковое масло 40 мл
 1 этап
Нарезанный брусочками лук и измельченные грибы обжарить на сковороде до золотистости.
 2 этап
Измельченные кабачки добавить в сковороду вместе с чесноком. Готовить пару минут.

Ингредиенты 4-го этапа:

Рис Арборио 300 г Вино белое сухое (столовое) 150 мл
Соль морская 1 ч.л.
 3 этап
В овощи кладем промытый и обсушенный рис, перемешиваем. Оставляем до полного впитывания жидкости. Затем добавляем белое вино, перемешиваем.

Ингредиенты 5-го этапа:

Бульон куриный 500 мл Фасоль зеленая стручковая 150 г
 4 этап
Когда вино впитается, начинаем понемногу добавлять горячий бульон, постоянно помешивая и дожидаясь полного впитывания каждой порции. За 5 минут до окончания приготовления добавляем зеленую фасоль.

Ингредиенты 6-го этапа:

Пармезан (Пармиджано Реджано) 150 г
 5 этап
В самом конце добавляем натертый пармезан, оставив немного для посыпки.

Ризотто — замечательное итальянское блюдо, у которого существует масса вариантов приготовления, так же как у пасты. Это ризотто почти вегетарианское, единственное, в этом случае должен быть овощной бульон.
