Разогреть духовку до 130 градусов, птицу выложить в форму на решетку и плотно замотать (гуся, решетку, форму) алюминиевой фольгой в несколько слоев.
Запекать 3 часа при температуре 130 градусов по шкале Цельсия.

Ингредиенты 1-го этапа:

Соль 3 ч.л. Гусь целый (3,5 кг) 1 шт.

За сутки до запекания втереть в кожу гуся соль (40 гр, мелкий помол) и оставить на нижней полке холодильника.

Ингредиенты 2-го этапа:

Яблоки 0.10 кг
 1 этап
За пару часов до запекания вынуть птицу и дать гусю «согреться», в это же время запечь некислое яблоко для соуса. От тушки отрезать шею и последнюю секцию каждого крыла (пригодится для соуса). Гуся обтереть кухонным полотенцем, чтобы удалить излишек соли и влаги, проткнуть кожу иголкой в тех местах, где гусь наел свой жир. Важно протыкать только слой кожи и жира, не задевая мяса. Разогреть духовку до 130 градусов, птицу выложить в форму на решетку и плотно замотать (гуся, решетку, форму) алюминиевой фольгой в несколько слоев. Запекать 3 часа при температуре 130 градусов по шкале Цельсия.

Ингредиенты 3-го этапа:

Сельдерей стеблевой 60 г Редька зеленая 50 г
Петрушка 5 г Лавровый лист 2 шт.
Тимьян 5 г Перец душистый 4 шт.
Морковь 70 г Яблочный сидр сухой 500 мл
Букет гарни 1 шт. Турнепс 50 г
 2 этап
Обжарить шею и часть крыла до золотистого цвета, добавить нарезанную морковь, 2 небольших стебля сельдерея, турнепс, букет гарни, состоящий из петрушки, лаврового листа и тимьяна; зелёный перец (горошком – перечные ягоды), соль. Припускать в жире (если его достаточно, если нет – добавить немного сидра) на среднем огне до мягкости овощей(10-12 минут), добавить сидр небольшими порциями, доводя до кипения (сидр изначально должен быть комнатной температуры) – всего 500 мл. Редуцировать (выпарить) до половины .

Ингредиенты 4-го этапа:

Сахар коричневый 30 г Горошек зеленый свежий (очищенный) 300 г

Уваренный сидр снять с огня, процедить (овощи и травы больше не нужны). Запеченное яблоко протереть через сито в пюре, добавить в не очень горячий уваренный сидр, размешать, процедить еще раз. Соуса получается около 300 мл. После трех часов запекания гуся вынуть из духовки, разрезать фольгу (осторожно – горячий пар), слить жир (получилось 400 мл), 5 столовых ложек которого смешать с коричневым сахаром (30 гр) или медом. Этой смесью обмазать гуся и поставить обратно в духовку (без фольги) на 30 минут при температуре 190 градусов или под гриль. Здесь нужно следить, чтобы гусь не сгорел. Вынуть из духовки, дать остыть 15-20 минут перед разделкой. В качестве гарнира уместен зеленый горошек (на пару).
