Обычно для приготовления рыбы в желе используют белую рыбу умеренной жирности, с минимальным количеством костей.
В этом рецепте объединяются достоинства плотного филе белой рыбы морской заморозки и нежной, подкопчённой нерки.

Ингредиенты 1-го этапа:

Филе сайды на коже 800 г
 0 этап
Для рыбного бульона понадобится либо целая тушка крупной белой рыбы, либо филе на коже. Во втором случае для насыщенного вкуса бульона дополнительно можно использовать головы и хвосты другой рыбы. На фото филе сайды на коже, сухой морской заморозки. После размораживания такой рыбы влаги выделяется минимальное количество, а мясо остается плотным, практически в первозданном виде.

Ингредиенты 2-го этапа:

Головизна рыбы (головы, хребты, хвосты) 500 г Соль 1 ч.л.
 1 этап
В кастрюлю сложите головы (не забудьте удалить жабры), хвост и филе на коже. Залейте чистой холодной водой, посолите и доведите до кипения. Тщательно снимайте образующуюся пену.
 2 этап
Как только вода закипит, выньте филе. Его не нужно долго варить, чтобы оно не потеряло свой вкус. Аккуратно снимите с филе кожу и верните её в бульон, а филе отложите.
 3 этап
Руками осторожно разделите рыбу на небольшие кусочки и сложите в большую форму для заливного либо в порционные формочки.

Ингредиенты 5-го этапа:

Морковь 100 г Лук репчатый (100г) 1 шт.
Сельдерей стеблевой 50 г Перец душистый 5 шт.
Укроп 30 г Лист каффирского лайма 3 шт.
 4 этап
В рыбный бульон, готовящийся на очень слабом огне, добавьте очищенную морковь, стебли сельдерея и укропа луковицу в шелухе, душистый перец и лист каффирского лайма. Эта специя имеет очень приятный лимонный аромат, который хорошо подойдёт к рыбе.
 5 этап
Варите бульон 2-3 часа. Следите, чтобы бульон не кипел сильно, иначе он может помутнеть.
 6 этап
Готовый бульон попробуйте, процедите. Для процеживания бульона идеально подходят специальные кухонные салфетки из нетканого полотна, сложенные в 2-3 слоя. Они задерживают мельчайшие частицы и бульон получается идеально прозрачным без особых сложностей. В небольшом количестве бульона распустите желатин, добавьте в кастрюлю и нагрейте до полного растворения.

Часто в заливное добавляют варёную морковь, но обычно она служит только визуальным украшением, а вкус не улучшает. Особенно, когда она уже отдала вкус и аромат бульону. Чтобы внести вкусовое и цветовое разнообразие попробуйте отказаться от моркови, а вместо неё положить слабосолёную, подкопчённую нерку. Вот эта рыба на фото такая вкусная, что непросто удержаться и не съесть её ещё в процессе готовки :)

Нерку нарежьте и добавьте к белой рыбе. Туда же добавьте измельчённые листья укропа (стебли удалите обязательно, они слишком грубые).

Обычно для приготовления рыбы в желе используют белую рыбу умеренной жирности, с минимальным количеством костей.
В этом рецепте объединяются достоинства плотного филе белой рыбы морской заморозки и нежной, подкопчённой нерки.

Головизна рыбы (головы, хребты, хвосты) 500 г
Нерка копченая (филе) 200 г
Филе сайды на коже 800 г
Лимоны 1 шт.
Лук репчатый (100г) 1 шт.
Морковь 100 г
Сельдерей стеблевой 50 г
Лист каффирского лайма 3 шт.
Перец душистый 5 шт.
Соль 1 ч.л.
Укроп 30 г

Для рыбного бульона понадобится либо целая тушка крупной белой рыбы, либо филе на коже. Во втором случае для насыщенного вкуса бульона дополнительно можно использовать головы и хвосты другой рыбы. На фото филе сайды на коже, сухой морской заморозки. После размораживания такой рыбы влаги выделяется минимальное количество, а мясо остается плотным, практически в первозданном виде.

Головизна рыбы (головы, хребты, хвосты) 500 г

В кастрюлю сложите головы (не забудьте удалить жабры), хвост и филе на коже. Залейте чистой холодной водой, посолите и доведите до кипения. Тщательно снимайте образующуюся пену.

Как только вода закипит, выньте филе. Его не нужно долго варить, чтобы оно не потеряло свой вкус. Аккуратно снимите с филе кожу и верните её в бульон, а филе отложите.

Руками осторожно разделите рыбу на небольшие кусочки и сложите в большую форму для заливного либо в порционные формочки.

Перец душистый 5 шт.
Укроп 30 г
Лист каффирского лайма 3 шт.

В рыбный бульон, готовящийся на очень слабом огне, добавьте очищенную морковь, стебли сельдерея и укропа луковицу в шелухе, душистый перец и лист каффирского лайма. Эта специя имеет очень приятный лимонный аромат, который хорошо подойдёт к рыбе.

Варите бульон 2-3 часа. Следите, чтобы бульон не кипел сильно, иначе он может помутнеть.

Готовый бульон попробуйте, процедите. Для процеживания бульона идеально подходят специальные кухонные салфетки из нетканого полотна, сложенные в 2-3 слоя. Они задерживают мельчайшие частицы и бульон получается идеально прозрачным без особых сложностей. В небольшом количестве бульона распустите желатин, добавьте в кастрюлю и нагрейте до полного растворения.
