Ингредиенты 1-го этапа:

Нут (турецкий горох) 100 г Перловая крупа 100 г

Заранее замочите нут в большом количестве холодной воды. Оставьте на несколько часов (чем суше и «старше» нут, тем больше времени нужно), можно на ночь. Если времени мало, можно во время замачивания добавить чайную ложку соды. После замачивания нут хорошо промойте, налейте в кастрюлю 1,5-2 литра чистой воды и варите 30-40 минут с момента закипания. Когда поставите варить нут, замочите перловую крупу. Если крупа хорошего качества, она очень быстро набухнет.

Нут должен стать довольно мягким, но еще не полностью готовым. Если надо, можно долить свежей воды.

Ингредиенты 3-го этапа:

Морковь 150 г Растительное масло 10 мл
Чеснок дольки 2 шт.
 2 этап
Морковь нарежьте мелкими кубиками и обжарьте в небольшом количестве растительного масла до мягкости (5-7 минут), не забывая помешивать. За пару минут до готовности добавьте в сковороду мелко нарезанный чеснок.
 3 этап
Положите обжаренную морковь в кастрюлю к нуту, туда же добавьте промытую после замачивания перловку.

Ингредиенты 5-го этапа:

Кукуруза замороженная 200 г

Добавьте кукурузу. Кукуруза, как и морковь, придает некоторую сладость и яркость супу.

Ингредиенты 6-го этапа:

Соль 1 ч.л.

Посолите и продолжайте варить на небольшом огне, пока нут и перловка не разварятся достаточно (до мягкости). Солите умеренно, потому что бекон тоже довольно соленый, здесь лучше недосолить.

Ингредиенты 7-го этапа:

Лук зеленый 30 г

Когда суп будет почти готов, нарежьте зеленый лук и тоже добавьте его в суп.

Ингредиенты 8-го этапа:

Бекон (сырокопченый) 100 г

Сырокопченый бекон нарежьте небольшими кусочками и обжарьте на маленьком огне так, чтобы из него вытопился основной жир, а сам он стал золотистым и хрустящим. Удобно для этого использовать вок или наклонять сковороду так, чтобы кусочки бекона плавали в вытопленном жире. Тогда они обжариваются равномерно и не подгорают.
 8 этап
Обжаренный бекон и вытопленный жир (или его часть) отправьте в суп. Поварите суп еще пару минут, накройте крышкой и дайте немного постоять, чтобы ароматы и вкусы лучше объединились. Попробуйте, не надо ли досолить.
 9 этап
Подавайте горячим, со свежей зеленью и хлебом.

Посолите и продолжайте варить на небольшом огне, пока нут и перловка не разварятся достаточно (до мягкости). Солите умеренно, потому что бекон тоже довольно соленый, здесь лучше недосолить.

Когда суп будет почти готов, нарежьте зеленый лук и тоже добавьте его в суп.

Сырокопченый бекон нарежьте небольшими кусочками и обжарьте на маленьком огне так, чтобы из него вытопился основной жир, а сам он стал золотистым и хрустящим. Удобно для этого использовать вок или наклонять сковороду так, чтобы кусочки бекона плавали в вытопленном жире. Тогда они обжариваются равномерно и не подгорают.

Обжаренный бекон и вытопленный жир (или его часть) отправьте в суп. Поварите суп еще пару минут, накройте крышкой и дайте немного постоять, чтобы ароматы и вкусы лучше объединились. Попробуйте, не надо ли досолить.
