Существует три вида меренги — французская (взбивание белков с сахаром без нагрева), итальянская (заваривание взбитых белков сахарным сиропом) и швейцарская, когда взбивание белков происходит с одновременным их подогревом. Швейцарская меренга отлично подходит для использования в качестве крема для пирогов и пирожных без дополнительной температурной обработки, у нее очень нежная текстура, но при этом она отлично держит форму и может служить для украшения кондитерских изделий. Кроме того, швейцарскую меренгу можно использовать как основу для безе, пирожных макаронс и различных других десертов. Способы приготовления швейцарской меренги бывают разными, но в одной книге я узнала об очень простом и эффективном способе ее приготовления, которым собираюсь поделиться. Рецепт надежный и ни разу меня не подводил.

Ингредиенты 1-го этапа:

Яичный белок 3 шт. Сахар (песок) 200 г
Соль 0.25 ч.л.
 0 этап
В подходящую миску положите яичные белки, добавьте по 1 ст.л. воды на каждый белок (опционально, я делала и с водой и без нее). Всыпьте сразу весь сахар и щепотку соли.
 1 этап
Миску с белками поставьте над кастрюлей с едва кипящей водой взбивайте миксером на низкой скорости 4 минуты. За это время белки прогреются, станут эластичными и растяжимыми, а сахар растворится.
 2 этап
В следующие 4 минуты увеличьте скорость до максимальной и продолжайте взбивать белки, не снимая миску с водяной бани.
 3 этап
Во время второго этапа взбивания меренга начнет густеть, побелеет и заметно уплотнится.
 4 этап
Когда истекут вторые 4 минуты, снимите миску с водяной бани и продолжайте взбивать на высокой скорости еще 4 минуты. За это время меренга остынет и стабилизируется.
 5 этап
Если вы готовите пирожные вроде макаронс или Павловой, на этом этапе можно вводить дополнительные ингредиенты, требуемые по рецепту или просто красители и ароматические добавки.
 6 этап
Готовая меренга получается воздушной, но устойчивой, плотной, глянцевой и пластичной. Ее можно хранить несколько часов в прохладном месте и она не потеряет форму.

Существует три вида меренги — французская (взбивание белков с сахаром без нагрева), итальянская (заваривание взбитых белков сахарным сиропом) и швейцарская, когда взбивание белков происходит с одновременным их подогревом. Швейцарская меренга отлично подходит для использования в качестве крема для пирогов и пирожных без дополнительной температурной обработки, у нее очень нежная текстура, но при этом она отлично держит форму и может служить для украшения кондитерских изделий. Кроме того, швейцарскую меренгу можно использовать как основу для безе, пирожных макаронс и различных других десертов. Способы приготовления швейцарской меренги бывают разными, но в одной книге я узнала об очень простом и эффективном способе ее приготовления, которым собираюсь поделиться. Рецепт надежный и ни разу меня не подводил.

Вам понадобится Ингредиенты скопированы

Сахар (песок) 200 г
Соль ¼ ч.л.

Яичный белок 3 шт.
Сахар (песок) 200 г

В подходящую миску положите яичные белки, добавьте по 1 ст.л. воды на каждый белок (опционально, я делала и с водой и без нее). Всыпьте сразу весь сахар и щепотку соли.

Миску с белками поставьте над кастрюлей с едва кипящей водой взбивайте миксером на низкой скорости 4 минуты. За это время белки прогреются, станут эластичными и растяжимыми, а сахар растворится.

В следующие 4 минуты увеличьте скорость до максимальной и продолжайте взбивать белки, не снимая миску с водяной бани.

Во время второго этапа взбивания меренга начнет густеть, побелеет и заметно уплотнится.

Когда истекут вторые 4 минуты, снимите миску с водяной бани и продолжайте взбивать на высокой скорости еще 4 минуты. За это время меренга остынет и стабилизируется.

Если вы готовите пирожные вроде макаронс или Павловой, на этом этапе можно вводить дополнительные ингредиенты, требуемые по рецепту или просто красители и ароматические добавки.

Готовая меренга получается воздушной, но устойчивой, плотной, глянцевой и пластичной. Ее можно хранить несколько часов в прохладном месте и она не потеряет форму.
