Поджаренные ломтики баклажанов — идеальная основа для разнообразных закусок. Часто они подаются в виде рулетиков с начинками, которые очень хороши в холодном виде. Весьма удобно приготовить их заранее и хранить до подачи в холодильнике. В этом рецепте сырная начинка с чесноком и базиликом. Немного изменяя пропорции ингредиентов можно добиться идеального именно для вас вкуса.

Ингредиенты 1-го этапа:

Баклажаны 700 г

Баклажаны вымойте, высушите и нарежьте вдоль тонкими ломтиками (2-3 мм). Если они горчат, лучше замочить их в соленой воде на полчаса, но современные баклажаны, которые продаются в магазинах, как правило, в этом не нуждаются.

Ингредиенты 2-го этапа:

Растительное масло 100 мл
 1 этап
Поджарьте баклажаны до светло-коричневого цвета, слегка посолив. Баклажаны сильно впитывают масло во время жарки, поэтому лучше слегка смазывать сковородку кисточкой, либо наносить масло на сами баклажанные пластины. Тогда готовые рулетики не будут слишком жирными.

Ингредиенты 3-го этапа:

Фета сыр 350 г
 2 этап
Для начинки возьмите сыр фета или "сербскую брынзу", разомните его вилкой. Обратите внимание, чтобы в составе не было посторонних добавок, вроде растительных жиров или белка, а только молоко, соль, закваска и ферменты.

Ингредиенты 4-го этапа:

Чеснок дольки 1 шт. Соль морская 0.25 ч.л.
 3 этап
Чеснок (1-2 дольки, в зависимости от размера и ваших предпочтений) мелко нарежьте и разотрите в ступке с щепоткой крупной соли до однородного пастообразного состояния.

Ингредиенты 5-го этапа:

Базилик свежий зеленый 40 г
 4 этап
Добавьте в сыр растертый чеснок и нарезанные листья свежего базилика. Хорошо размешайте. Можно немного добавить рассола от сыра, чтобы смесь была однородной и пластичной.
 5 этап
На поджаренный и остывший баклажан положите чайную ложку сырной смеси и аккуратно сверните рулетик.
 6 этап
Начините таким образом все баклажаны.
 7 этап
Такую закуску можно подавать сразу же или через несколько часов. В случае хранения её нужно держать в холодильнике в закрытом контейнере или плотно накрыв пищевой пленкой.
