В моем рецепте все ингредиенты рассчитаны на 1 л соления, так что если Вам нужно больше увеличивайте все пропорционально. Малосольные и солёные огурцы — одно из традиционных блюд русской кухни — замечательная русская закуска. Огурцы, которые только успели просолиться, называют малосольными. При более долгом солении происходит заквашивание — процесс образования молочной кислоты.

Их едят как целиком, так и добавляют в различные блюда в нарезанном виде — в салаты, супы, солянки.

Солёные огурцы — традиционная русская закуска к водке.

Малосольные и соленые огурцы хорошо стимулируют аппетит, поэтому с ним надо быть осторожным. :)

Сегодня расскажу, как сделать малосольные огурцы за 1 сутки с помощью горячего рассола, а еще будут огурцы холодного приготовления. Но о них чуть позже, т.к. они только на подходе. А пока я поделюсь и рецептом и впечатлениями о первом варианте.

Я использую травы, которые, если не растут у Вас на даче, то обязательно продаются на любом рынке. Специальные «венички» для солений продаются у бабушек или в отделах с зеленью. В моем рецепте все ингредиенты рассчитаны на 1 л соления, так что если Вам нужно больше увеличивайте все пропорционально.

Ингредиенты 1-го этапа:

Листья вишни 5 шт. Листья черной смородины 5 шт.
Укроп зонтичный 1 шт. Хрен листовой (лист хрена) 20 шт.
Чеснок головки 2 шт. Перец чили красный 1 шт.
Лавровый лист 1 шт.

Приготовить специи (травы) для соления. Отобрать подходящие веточки, вымыть их и отложить.

Ингредиенты 2-го этапа:

Огурцы 500 г
 1 этап
Огурцы отобрать, они должны быть все примерно одного размера, вымыть и отрезать кончики.
 2 этап
Зелень уложить на дно в приготовленную чистую тару (банку, кастрюлю и т.п.): листья хрена, черный перец горошком, листья черной смородины, листья вишни, зонтичный укроп (его можно заменить семенами укропа), нарезанный перец чили и чеснок. Сверху огурцы и еще раз сверху прокладываете листьями хрена и зонтиками укропа.

Ингредиенты 4-го этапа:

Водка 20 мл Мёд 5 г
Соль 4 ч.л.
 3 этап
Вскипятить 0,5 л воды в кастрюле, добавить соль и неполную чайную ложку меда. Размешать до полного растворения, выключить плиту и влить столовую ложку водки.
 4 этап
Залить огурцы горячим рассолом.
Прикрыть крышкой и оставить их на сутки просаливаться при комнатной температуре. Если Вы не планируете съесть сразу все, то хранить их следует в холодильнике.

В моем рецепте все ингредиенты рассчитаны на 1 л соления, так что если Вам нужно больше увеличивайте все пропорционально.


Вам понадобится Ингредиенты скопированы

Огурцы 500 г
Водка 20 мл
Лавровый лист 1 шт.
Листья вишни 5 шт.
Листья черной смородины 5 шт.
Мёд 5 г
Перец чили красный 1 шт.
Соль 4 ч.л.
Укроп зонтичный 1 шт.
Хрен листовой (лист хрена) 20 шт.
Чеснок головки 2 шт.

Приготовить специи (травы) для соления. Отобрать подходящие веточки, вымыть их и отложить.

Огурцы отобрать, они должны быть все примерно одного размера, вымыть и отрезать кончики.

Зелень уложить на дно в приготовленную чистую тару (банку, кастрюлю и т.п.): листья хрена, черный перец горошком, листья черной смородины, листья вишни, зонтичный укроп (его можно заменить семенами укропа), нарезанный перец чили и чеснок. Сверху огурцы и еще раз сверху прокладываете листьями хрена и зонтиками укропа.

Водка 20 мл
Мёд 5 г
Соль 4 ч.л.

Вскипятить 0,5 л воды в кастрюле, добавить соль и неполную чайную ложку меда. Размешать до полного растворения, выключить плиту и влить столовую ложку водки.

Залить огурцы горячим рассолом.

Прикрыть крышкой и оставить их на сутки просаливаться при комнатной температуре. Если Вы не планируете съесть сразу все, то хранить их следует в холодильнике.
