Лечо — распространенное и любимое у нас блюдо. Как и все популярные рецепты, лечо имеет много разновидностей.

Я решила поделиться с вами самым простым, но очень вкусным рецептом.

Хорошо приготовить сразу побольше, пока не закончился сезон свежего грунтового перца, и закрыть в банках в качестве заготовки на зиму.

Потом будет, чем полакомиться :)

Употреблять готовое лечо можно и в холодном и в горячем виде, можно также добавлять в различные салаты, горячие блюда, подавать к мясным изделиям в качестве дополнения, а также есть отдельно от всего остального :)

Ингредиенты 1-го этапа:

Перец сладкий грунтовой 2.5 кг

Перец нужно хорошо вымыть и очистить от семян. Для лечо лучше всего подходит мясистый толстостенный перец разных цветов, но красный цвет должен обязательно присутствовать для более радостной окраски блюда.
 1 этап
Резать перец можно как угодно, но мне нравятся вот такие полоски шириной около сантиметра.

Ингредиенты 3-го этапа:

Уксус столовый 100 мл Растительное масло 100 мл
Томатное пюре 1000 г Сахар (песок) 100 г
Соль морская 2 ч.л. Перец чили молотый 1 ч.л.
Паприка молотая 1 ч.л.
 2 этап
Одновременно нужно подготовить соус. Для этого томатное пюре, масло, уксус, сахар, соль и специи нагреть в кастрюле. Томатное пюре можно сделать самостоятельно (из 1 кг спелых помидоров, очищенных от кожицы и измельченных в блендере или в мясорубке), а можно взять готовое. Что касается специй, то с ними лучше быть поаккуратнее, т.к. перец сам по себе обладает достаточно ярким вкусом.
 3 этап
Когда соус закипит, в него нужно положить перец и кипятить на небольшом огне около 5 минут. После этого его можно раскладывать по чистым сухим банкам. Скорее всего, весь объем сразу не влезет в кастрюлю, так что его можно класть двумя партиями — когда одна часть будет готова, разложить ее по банкам, а в оставшийся соус положить вторую партию.
 4 этап
В банки перец лучше укладывать достаточно плотно, а затем залить горячим соусом, чтобы он покрыл перец. Закройте банки и оставьте на несколько часов до полного остывания. Хранить лечо нужно в прохладном месте.
