Лазанью с грибами можно делать не только в грибной сезон. Для нее хорошо подойдут разные сочетания грибов, например, сушеные белые грибы (предварительно размочить), опята и доступные круглый год шампиньоны и вешенки. Если использовать сушеные белые грибы, то воду после замачивания можно использовать для замены части молока в бешамеле.

Ингредиенты 1-го этапа:

Лисички 500 г Шампиньоны 300 г

Свежие грибы тщательно очистите от земли, вымойте и обсушите.

Ингредиенты 2-го этапа:

Лук репчатый (100г) 2 шт. Чеснок дольки 3 шт.
Растительное масло 40 мл
 1 этап
Лук, нарезанный тонкими полукольцами и измельченный чеснок обжарьте в небольшом количестве масла до мягкости, не допуская изменения цвета. Добавьте нарезанные шампиньоны и готовьте, помешивая, 10 минут, пока из них не испарится лишняя жидкость. Затем добавьте лисички, посолите.

Ингредиенты 3-го этапа:

Соль 0.5 ч.л.

Посолите и продолжайте готовить еще около 10 минут на среднем огне, затем выключите огонь.

Ингредиенты 4-го этапа:

Сливочное масло 40 г Мука пшеничная 40 г
Молоко 400 мл
 3 этап
Приготовьте соус бешамель. Для этого в сотейнике растопите на слабом огне сливочное масло. Добавьте муку, размешайте и доведите до кипения. Снимите с огня и понемногу добавляйте в горячую смесь (ру) холодное молоко, очень тщательно размешивая, чтобы не было комков.

Ингредиенты 5-го этапа:

Мускатный орех тертый 0.25 ч.л. Соль 0.5 ч.л.
 4 этап
Поставьте смесь на небольшой огонь и варите, постоянно помешивая (особенно в уголках кастрюли), до загустения. Добавьте щепотку мускатного ореха и соль. Соус должен получиться не слишком густым, текучим.

Ингредиенты 6-го этапа:

Помидоры красные 350 г Орегано 1 ч.л.
Базилик сушеный 1 ч.л.

Спелые помидоры очистите от кожицы и сделайте пюре с помощью блендера, добавьте по чайной ложке ароматных сушеных трав.

Ингредиенты 7-го этапа:

Лазанья (листы) 12 шт. Сливочное масло 5 г
Твердый сыр (Пармезан, Грюйер, Пекорино) 150 г

Теперь сборка лазаньи.
Внимательно прочитайте инструкцию к листам, чтобы понять, нужно ли их предварительно отваривать. В этом рецепте используются листы, не требующие варки. Смажьте форму сливочным маслом. Выложите слой листов для лазаньи. Сверху налейте 3-4 ст.л. бешамеля, равномерно распределите по листу.
Следующим слоем выложите треть грибов, а затем треть томатного соуса. Накройте листами и повторяйте слои в том же порядке еще три раза. Последним должен быть слой бешамеля, который нужно щедро посыпать тертым сыром.
 7 этап
Верх лазаньи можно украсить разрезанными вдоль на 3-4 пластинки грибами.
 8 этап
Запекайте в разогретой до 190 градусов духовке 35-40 минут. Если сыр начнет слишком румяниться, накройте форму с лазаньей фольгой.
 9 этап
Дайте лазанье немного остыть, чтобы ее было легче резать, и подавайте. Блюдо самодостаточное, поэтому добавить можно только свежие овощи.

Свежие грибы тщательно очистите от земли, вымойте и обсушите.

Лук, нарезанный тонкими полукольцами и измельченный чеснок обжарьте в небольшом количестве масла до мягкости, не допуская изменения цвета. Добавьте нарезанные шампиньоны и готовьте, помешивая, 10 минут, пока из них не испарится лишняя жидкость. Затем добавьте лисички, посолите.

Посолите и продолжайте готовить еще около 10 минут на среднем огне, затем выключите огонь.

Приготовьте соус бешамель. Для этого в сотейнике растопите на слабом огне сливочное масло. Добавьте муку, размешайте и доведите до кипения. Снимите с огня и понемногу добавляйте в горячую смесь (ру) холодное молоко, очень тщательно размешивая, чтобы не было комков.

Поставьте смесь на небольшой огонь и варите, постоянно помешивая (особенно в уголках кастрюли), до загустения. Добавьте щепотку мускатного ореха и соль. Соус должен получиться не слишком густым, текучим.

Спелые помидоры очистите от кожицы и сделайте пюре с помощью блендера, добавьте по чайной ложке ароматных сушеных трав.

Твердый сыр (Пармезан, Грюйер, Пекорино) 150 г

Теперь сборка лазаньи.
Внимательно прочитайте инструкцию к листам, чтобы понять, нужно ли их предварительно отваривать. В этом рецепте используются листы, не требующие варки. Смажьте форму сливочным маслом. Выложите слой листов для лазаньи. Сверху налейте 3-4 ст.л. бешамеля, равномерно распределите по листу.
Следующим слоем выложите треть грибов, а затем треть томатного соуса. Накройте листами и повторяйте слои в том же порядке еще три раза. Последним должен быть слой бешамеля, который нужно щедро посыпать тертым сыром.

Верх лазаньи можно украсить разрезанными вдоль на 3-4 пластинки грибами.

Запекайте в разогретой до 190 градусов духовке 35-40 минут. Если сыр начнет слишком румяниться, накройте форму с лазаньей фольгой.

Дайте лазанье немного остыть, чтобы ее было легче резать, и подавайте. Блюдо самодостаточное, поэтому добавить можно только свежие овощи.
