Её подают к гусям, уткам и, как правило, к знаменитым немецким рулетам из говядины. Многие такую капусту покупают в магазине и с определенными улучшениями подают к столу. Надо сказать, есть очень неплохо приготовленные экземпляры. Но это не наш метод. Давайте вместе со мной сегодня приготовим это блюдо, тем более, что я запланировал приготовить утиную грудку на обед. Надо сказать, что капуста готовится в несколько этапов. Есть несколько рецептов, когда перед готовкой капуста маринуется. В данном случае, я постараюсь вам показать рецепт без предварительного маринования.

Ингредиенты 1-го этапа:

Капуста краснокочанная 1000 г
 0 этап
Естественно, в начале нарежем капусту.

Ингредиенты 2-го этапа:

Сахар (песок) 30 г
 1 этап
Затем в подходящей кастрюле распустим пару столовых ложек сахара. Карамелизируем.

Ингредиенты 3-го этапа:

Вино красное сухое (столовое) 150 мл Портвейн 100 мл
Лук репчатый (100г) 1 шт. Гвоздика 10 шт.
Корица в палочках 2 шт. Ягоды можжевельника 5 шт.
Перец черный горошком 10 шт. Лавровый лист 1 шт.
 2 этап
Как только карамель приобрела легкий золотистый цвет, добавим вино с портвейном, хорошо вымешаем и дадим жидкости выпариться на две трети до приобретения консистенции легкого соуса. К этому соусу добавим нашу капусту и оставим на среднем-ниже среднего огне попотеть приблизительно 45 мин. Если вы увидите, что для тушения вам не хватает жидкости, добавьте немного бульона или воды. На двадцатой минуте к капусте прибавьте первую часть специй: лук с гвоздикой, корицу, ягоды можжевельника, черный перец горошком и лавровый лист.

Ингредиенты 4-го этапа:

Цедра апельсина 1 ч.л. Цедра лимона 0.25 шт.
Яблоки (160 г) 2 шт.
 3 этап
Для следующего этапа тушения возьмем пару полосок цедры лимона и апельсина, почистим и нарежем яблоки.

Ингредиенты 5-го этапа:

Черносмородиновое варенье 30 мл Уксус бальзамический 15 мл
Имбирь свежий 2 см
 4 этап
Вот и прошло 45 минут, к капусте для улучшения вкусовых качеств добавляем яблоки, цедру, пару столовых ложек варенья или конфитюра из смородины, бальзамик. Можно ещё добавить 50 грамм шоколада и пару шайб имбиря.

Ингредиенты 6-го этапа:

Сливочное масло 50 г
 5 этап
Оставим ещё на полчасика тушиться. В конце добавим сливочное масло.
 6 этап
Вот и все, к этому времени уже готова утка и картофельные кнедлики. Кстати кнедли с капустой практически состоят в браке. Они подаются как правило всегда вместе, но это уже другая история.
