Ирландское рагу приобрело известность в широких кругах с легкой руки Джерома К. Джерома, благодаря запоминающемуся юмористическому описанию приготовления некоего блюда, которое упоминалось как ирландское рагу. Чего только не положили в него литературные персонажи, следуя утверждению одного из них: «главное достоинство ирландского рагу: сразу избавляешься от всего лишнего». В реальности, хотя рецепты ирландского рагу различаются в зависимости от района и даже просто по воле и вкусу автора, это довольно минималистичное блюдо, которое может состоять даже всего из двух ингредиентов: мяса и картофеля. Остальные добавки создают варианты, которые оттеняют вкус и вид, но все же не изменяют блюдо до неузнаваемости.

Ингредиенты 1-го этапа:

Баранина на косточке 900 г

В классическом ирландском рагу используется баранина с косточками. Такой тип мяса дает много вкуса и может готовиться долго, не теряя вкуса. На фото — шейная часть.
 1 этап
В подходящую кастрюлю с толстым дном, подходящую для тушения (можно взять казан, чугун, что удобно) положите мясо, нарезанное крупными кусками.

Ингредиенты 3-го этапа:

Лук репчатый (100г) 3 шт.
 2 этап
Можно слегка обжарить мясо, хотя это не традиционно для рагу. Теперь добавьте лук. Можно резать его мелко, но за долгое время приготовления даже крупно порезанный лук практически растворяется в готовом рагу.

Ингредиенты 4-го этапа:

Перловая крупа 150 г
 3 этап
Перловка тоже необязательный, но довольно частый элемент ирландского рагу, и она придает дополнительную густоту и структуру готовому блюду, поэтому она здесь. Предварительно ее нужно хорошо промыть, а лучше и замочить примерно на час.

Ингредиенты 5-го этапа:

Соль 2 ч.л.
 4 этап
Налейте воды столько, чтобы она покрыла мясо (около 0,5л). Посолите. Можно добавить черный перец, что-то из пряных трав (петрушка, тимьян), но это тоже не догма.

Ингредиенты 6-го этапа:

Картофель 1000 г Морковь 250 г
 5 этап
Положите крупно нарезанную картошку и морковь. Морковь по желанию, но я за то, чтобы её класть, потому что она украшает рагу, и придает дополнительный чуть сладковатый вкус. Картофель нужно выбирать не слишком крахмалистый, чтобы за долгое время тушения он не развалился. Если у вас рассыпчатый сорт, можно положить картошку позже. Лучше, чтобы вода не покрывала её полностью — пусть варится частично на пару.
 6 этап
Готовьте на очень маленьком огне под неплотно прикрытой крышкой 2-4 часа, пока мясо не начнет отходить от костей. Перемешивать ничего не надо, просто ждать и следить, чтобы не было бурного кипения.
 7 этап
Готовое рагу можно как раз подать с зеленью и черным перцем. Может быть, это не так уж аутентично, зато красиво.
 8 этап
Как видите, готовится рагу практически само, работы минимум. В результате получается сытное, ароматное блюдо на большую семью или на несколько подходов для 2-3 человек.
