Так как пирог баскский — по идее он не может быть отнесен к кухне какого-то одного нынешнего государства, но по своим личным ассоциациям все-таки отнесу его к французской кухне.<br>Минусы у этого пирога только в том, что его хочется съесть еще на стадии приготовления, так как и крем, и ягоды и тесто получаются очень вкусными. 
В оригинале пирог готовится с черешней, но вишня, на мой взгляд, очень удачно дополняет сладость пирога нежной кислинкой. Этот вкуснейший пирог в несколько других вариациях покорил меня еще на картинках жж-кулинаров. Так как пирог баскский — по идее он не может быть отнесен к кухне какого-то одного нынешнего государства, но по своим личным ассоциациям все-таки отнесу его к французской кухне.
Минусы у этого пирога только в том, что его хочется съесть еще на стадии приготовления, так как и крем, и ягоды и тесто получаются очень вкусными. В оригинале пирог готовится с черешней, но вишня, на мой взгляд, очень удачно дополняет сладость пирога нежной кислинкой.

Ингредиенты 1-го этапа:

Сахарная пудра с ванилью 50 г Яичный желток 5 шт.
Мука пшеничная 50 г
 0 этап
Сначала готовим заварной крем. Для этого смешиваем желтки 5 яиц с 50 г сахарной пудры. Добавляем туда же 50 г муки и тщательно перемешиваем до получения однородной смеси.

Ингредиенты 2-го этапа:

Молоко 500 мл Сахар (песок) 50 г
 1 этап
500 мл молока нагреваем с 50 г сахара. Как только молоко начнет закипать — выливаем его в желтки и хорошо перемешиваем.
 2 этап
Опять нагреваем молочно-желтковую смесь на небольшом огне, постоянно ее помешивая. Как только смесь загустеет, снимаем ее с огня и охлаждаем.

Ингредиенты 4-го этапа:

Сливочное масло 200 г Сахар (песок) 180 г
Яйцо куриное 1 шт. Яичный желток 1 шт.
Ром светлый 40 мл Мука пшеничная 400 г
 3 этап
Теперь готовим песочное тесто. Для этого размягченное масло смешиваем с сахаром, одним яйцом и одним желтком. Добавляем туда 2 столовые ложки рома. В завершение добавляем в тесто муку и быстро замешиваем.
 4 этап
Делим тесто на две части в соотношении 1:2, заворачиваем тесто в пленку и ставим в холодильник на 30–40 минут.

Ингредиенты 6-го этапа:

Вишня 200 г Миндаль 50 г
 5 этап
Поскольку для начинки нам понадобятся вишня или черешня без косточек — вытаскиваем их из свежих вымытых ягод. 2/3 теста равномерно распределяем по форме, делая небольшие бортики и посыпаем молотым миндалем. На получившуюся основу выкладываем половину остывшего заварного крема, слой ягод, затем опять слой крема.
 6 этап
Сверху пирог закрываем оставшимся тестом, тщательно защипываем краешки. Печется пирог 1 час при температуре около 160 градусов.
 7 этап
Перед подачей пирог нужно полностью остудить. Приятного чаепития!
